FCIA Fine Chocolate Glossary

Confectioner

A person, manufacturer, or business who produces sweets from sweeteners such as sugar, which may include other ingredients such as cocoa, nuts, and fruit. The scale at which they work can range from artisanal to commercial, with differences in the balance between art and science.

Examples for products that are made by confectioners include, but are not limited to, candies, chocolate bonbons, pralines, jellies, pate de fruit, brittles, marshmallows, cakes, and cookies.
